L’Inra, via le Centre international de ressources microbiennes dédié aux bactéries d’intérêt alimentaire installé à Rennes, est le coordinateur scientifique du nouveau projet Flegme porté par le pôle de compétitivité Végépolys Valley. Ce projet vise à explorer de nouvelles voies pour valoriser durablement des légumes cultivés dans le Grand Ouest en utilisant la fermentation. Financé par les Régions Bretagne et Pays de la Loire, il associe des acteurs de la société civile dans le cadre d’une démarche de recherche participative.
